Hello fellow Food lovers , Artisans and Connoisseurs , This week I wanted to share a recipe from my favorite cook book, Good housekeeping Vegetarian ,which I’ve had for over 20yrs, it’s a quick and easy recipe for all the sweet tooth’s out there. The recipe makes 12 brownies and you can use almonds, walnuts or pecans if your prefer to the hazelnuts.
White Chocolate and Hazelnut Brownies
175g Shelled Hazelnuts
500g White Chocolate
75g Butter
3 Eggs
175g caster Sugar
175g Self raising flour
Pinch of salt
5ml (1tsp) vanilla extract
Grease and line a baking tin (22*29cm or 8.5 by 11.5 inches ) 190 degree oven
Roughly chop the hazelnuts . Roughly chop 400g of the white chocolate and set aside .
Break the remaining chocolate into a heatproof bowl , add the butter and place over a pan of simmering water until melted. Leave to cool slightly.
Whisk the eggs and sugar together in a large bowl until smooth , the gradually beat in the melted chocolate and butter mix , Sift the flour and salt over the mixture ,then fold in the hazelnuts, chopped chocolate and vanilla extract.
Turn the mixture into the prepared tin and level the surface . Bake at 190 C for 30-35 minutes until risen and golden , and the Centre is just firm to the touch . When cooked , the mixture will still be very soft under the crust it will firm up during cooling ,Leave to cool in the tin ,Turn out and cut into 12 Squares . store in an airtight container for up 1 week .
